Chocolate mousse with faba water – Recipe without cream and lactose –
The chickpea water or better, the faba water… how many times have we thrown it away… including myself !!! It is not so? Since I discovered its uses, however, I always save some to prepare some delicious recipes! Here is an idea: a light, creamy and delicious chocolate mousse! It is a naturally lactose-free, sugar-free dessert and suitable for all those who want to indulge in a sweet treat but without exceeding! You absolutely have to try it… it’s done in a moment and it’s super !!
We recover the faba water from a jar of precooked chickpeas. Let’s put it in a mug and, with a mixer, whip it just as if they were egg whites with lemon juice. It should be “semi whipped”. We melt the dark chocolate in a double boiler or in the microwave. Let’s let it cool. Add a few tablespoons of whipped faba water to the chocolate and mix with a whisk. Once incorporated, we join the remaining part. We mix quickly until a homogeneous cream is formed. We can also add a pinch of cinnamon if we like. Pour the prepared cream into small glasses, cover with plastic wrap and let it cool in the fridge for half an hour before serving.
